Cherry Fritters

When you bite into the fritter and get a yummy chunk of cherry – it tastes just like cherry pie!  There’s something about cherries, when they get heated up, they really take on a whole new flavor and it is just amazing!  Makes 2 1/2 dozen Total Time: 40 minutes + chill time

Ingredients:


2 eggs, separated 

2/3 cup milk or cherry juice 
1 tablespoon butter, melted 
1 cup flour 
1 tablespoon sugar 
1/2 teaspoon cinnamon 
1 cup cooked cherries or cherry-pie filling 
1 tablespoon powdered sugar 
3-4 cups vegetable oil 
Powdered sugar for dusting 

Directions:


In a medium size bowl beat the egg yolks with the milk or cherry juice and melted butter. Stir in the flour, sugar and cinnamon. Cover and refrigerate for at least 20 minutes. (This batter can be prepared up to 4 hours in advance).


With an electric mixer beat the egg whites until peaks form. 

Fold them into the batter, then gently stir in the cherries and the 1 tablespoon powdered sugar. 

In a large skillet heat the oil and drop in the batter 
tablespoonfuls and fry 4-5 minutes until golden brown. Remove with a slotted spoon to a paper towel. Dust with powdered sugar and serve warm. Yum Yum!
