Broiled Eggs on Toast

I know you’ll like these egg for breakfast. They are easy and fast to make. Serves 2 Total Time: 15 minutes 


4 eggs 
4 pieces of dark bread (or any bread of your choosing)
3 tablespoons butter 
Salt, to taste 
Cayenne pepper or Tabasco, to taste 
1/2 cup grated Swiss cheese
1 cup ricotta 
1 tomato, sliced 
Garnish with shredded lettuce 


Baste your eggs. Toast your bread. On a baking sheet place your toast, then a layer of ricotta, top with a couple slices of tomato then the egg. Season with salt, cayenne pepper or Tabasco. Sprinkle on the grated Swiss cheese. Place under the broiler until the cheese melts. Garnish with some shredded lettuce. Adjust seasonings, if needed. Yum Yum!
