Prosciutto Antipasto Salad with Peppers and Mushrooms Homemade Italian Dressing

Having Italian for dinner? Want an Italian salad as a side dish? There are many Prosciutto Antipasto Salads  out there, but this one has only 8 ingredients including a homemade Italian Dressing which has only 6 that too many? IDK, but it serves 4 Total Time: 30 minutes


2 of each red, yellow and green peppers, seeded and sliced horizontally
3 large fresh mushrooms, cleaned and sliced thin
1 tablespoon lemon juice
1/2 lb prosciutto, sliced thin
Homemade Italian Dressing
Freshly ground black pepper, to taste


In a medium size bowl add the peppers, mushrooms and lemon juice; toss to combine. Roll prosciutto into tight bundles. Mix vegetables with homemade Italian dressing and divide evenly into 4 serving bowls. Garnish with the rolled prosciutto. Put the black pepper grinder on the table. Yum Yum!

Homemade Italian Dressing
  1/4 cup white wine vinegar
  1/2 cup olive oil
  Salt and pepper, to taste
  1 clove garlic, minced and mashed
  2 tablespoons chopped parsley or 1 tablespoon chopped basil
  1 hard boiled egg, yolk mashed, white finely chopped

  Combine all ingredients and mix thoroughly. Use immediately.
