Pork Loin Provencal

If you need another way to prepare a pork loin, try this French version. Serves 4 Total Time 2 hours 15 minutes.


1 2 1/2 lb pork loin roast (have a butcher crack chine bone so meat will carve into chops easily)
3 tablespoons olive oil
3 tablespoons tomato paste
Minced garlic, to taste
Salt and pepper, to taste


Rub meat with a mixture of oil, tomato paste, garlic, salt and pepper. Place a meat thermometer in the center of the roast, being careful that the tip doesn’t touch a bone. Wrap roast loosely in foil, allowing the thermometer to protrude for reading. Place in a 325F oven and roast until thermometer registers 170F, about 2 hours. Yum Yum!
