Rotisserie Chicken Salad with a Homemade Caper Vinaigrette Dressing

I always like a light dinner on a hot evening, especially one loaded with fresh vegetables and a healthy protein, like rotisserie chicken. And it doesn’t hurt that it’s quick and easy to make. Serves 2-4 Total Time: 20 minutes.

Ingredients:

3 cups rotisserie-cooked chicken, cut up
4 cups romaine lettuce, torn
1⁄4 cup red onion, chopped
1 cup cherry tomatoes, halved
1⁄2 cup celery, chopped
1⁄2 cup cucumber, diced

VINAIGRETTE
1⁄2 cup balsamic vinegar
1⁄4 cup extra virgin olive oil
1⁄4 cup water
2 teaspoons Dijon mustard
2 teaspoons light brown sugar
2 garlic cloves, minced
1⁄4 teaspoon pepper
1 tablespoon capers, drained and finely chopped

Directions:

Vinaigrette: Place all the ingredients in a screw-top jar and shake to combine. Taste and adjust the seasonings.

Salad: In a large bowl toss Romaine lettuce, chicken, cucumber, tomatoes, onion and celery. Pour dressing until evenly coated. Refrigerate at least 30 minutes before serving. Yum Yum!

Note: You can always add to this salad; try carrots, cauliflower, broccoli, cheese or even black olives.
