Easy Loaded Potato Skins with Bacon

These Easy Loaded Potato Skins with Bacon are great as an appetizer or a snack. Not a bacon lover, swap them out for chives, tomatoes, bell peppers or even pepperoni. Only 6 ingredients. Serves 4-6 Total Time: 1 hour 36 minutes

Ingredients:

4 baking potatoes
4 slices of bacon, cooked and crumbled
1/2 cup sour cream
2 tablespoons green onion, sliced
1 tablespoon yellow mustard
2/3 cup cheddar cheese, shredded

Directions:

Scrub potatoes, pat dry and prick with a fork. Bake in a 375F preheated oven for about 50 minutes until just soft. Let cool until you can handle them. Cut each potato into wedges, then scoop out center leaving a 1/4” shell.

Prepare filling: in a bowl add the scooped out potato, sour cream, green onions and mustard. Divide filling among the potato wedges. Place on a baking sheet, sprinkle with crumbled bacon and mozzarella cheese; bake at 400F for 5-10 minutes or until skins are hot and cheese has melted. Serve immediately. Yum Yum!

Microwave instructions:

Microwave scrubbed pierced potatoes on high power for 12-14 minutes or until just baked through. Turn over half way through cooking time. Let rest until you can handle them. Do the rest of the directions until bake...place on a microwave safe rack and microwave on high power for 4-5 minutes or until hot and cheese melts. Serve immediately.
