Queso Fundido

Queso Fundido, melted cheesy goodness that kinda like a loaded fondue dip; with chorizo, corn, peppers, onion and did I mention cheese?...there are 3 different cheeses! Serves 4-6 (6 cups) Total Time: 35 minutes

Ingredients:

1 lb uncooked chorizo
2 cups corn (fresh or frozen, thawed)
1 large red onion, chopped
1 poblano pepper, chopped
8 oz goat cheese, crumbled
2 cups cubed Monterey Jack cheese
1 cup cubed pepper jack cheese
1 large tomato, seeded and chopped
3 green onions, sliced thin
Chips for serving

Directions:

Preheat oven to 350F. In an oven-proof skillet crumble the chorizo, then add the corn, red onion and peppers. Cook over medium heat until meat is fully cooked, 6-8 minutes. Drain grease and set aside.

Stir in the cheeses and bake until bubbly, 14-16 minutes. Sprinkle with tomatoes and green onions. Serve with chips. Yum Yum!
