Street Corn Salad

Now that we’ve changed our clocks back to Daylight Savings Time I can just feel summer is right around the corner and a way to get ready is to have delicious side salads made with fresh ingredients. 

I’m all about making easy recipes and this Street Corn Salad is no exception. Only 9 ingredients put together in just 20 minutes. And to serve it up I’ve got a corn shaped covered dish for sale on eBay. There is a link at the end of this post, check it out. Serves 8

Ingredients 

1/2 cup cup fresh cilantro 
3 tablespoons fresh squeezed lime juice 
1 teaspoon salt 
1/2 teaspoon pepper 
2 tablespoons olive oil 
4 cups fresh corn kernels (can’t wait, use frozen thawed)
1 cup radishes, thinly sliced 
1 cup cherry tomatoes, halved 
1/2 cup feta cheese 

Directions:

In a small bowl whisk together the first 5 ingredients. In a medium bowl combine the corn, radishes and tomatoes; gently stir in the dressing and top with feta cheese. 

Serve in a covered corn shaped dish
