Chicken with Roasted Grapes

Chicken and grapes...now who thought of that? Crispy chicken baked in the oven, so you’ll need an oven-proof skillet for this recipe. Serves 4 Total Time: only 30 minutes. This could be another Easy Chicken Recipe.

Ingredients:

1 tablespoon olive oil
1 tablespoon vegetable oil
1 clove garlic, smashed
4 chicken thighs or breasts, skins on
Salt and pepper, to taste
3 shallots, cut lengthwise
1 tablespoon balsamic vinegar
1 lb seedless red grapes, divide into clusters
1 tablespoon fresh rosemary, chopped

Directions:

Preheat oven to 400F. Heat both oils in an oven-proof skillet on med/high. Add garlic and cook 1 minute. Salt and pepper, to taste both sides of your chickens and place skin side down in skillet.Sear until crispy on both sides, 6-7 minutes each side. Place shallots between chicken pieces as well as the grape clusters.

Sprinkle with rosemary and bake for 20 minutes or until internal temperature reaches 165F-170F. To serve divide chicken and grapes among plates and spoon some of the liquid over the chicken. Yum Yum!

Note: Remember what I said before about oils. When searing it’s better to use both oils, because olive oil has a low smoke point and vegetable oil has a higher smoke point. When you use vegetable oil with olive oil it raises olive oil’s smoke point.
