This is a healthy dish full of delicious garlic flavor and can be prepared in a matter of minutes. Serves 4
1 lb skinless boneless chicken breasts, cut into strips
1 package (16oz) of frozen vegetables of your choice
Garlic flavored seasoning spray
1 tablespoon cornstarch
3/4 cup fat free chicken broth
2 cups cooked rice of your choice
Prepare rice according to package instructions.
Coat chicken with the garlic flavored seasoning spray, about 10 seconds. Place the frozen vegetables in a bowl and spray them with the same garlic flavored seasoning spray, 5 seconds. Spray a large skillet and sauté the chicken on medium heat 6-8 minutes or until no longer pink. Add the frozen vegetables to the skillet, stir occasionally. Meanwhile, dissolve cornstarch in the broth, then gradually add it to the skillet. Stir until thickens, about 2 minutes. Serve over the cooked rice or add the rice in the skillet, stir to combine.
