Baked Scrod with Lemon Rice Pilaf

You ask “Why are you putting scrod with rice?” I say “Good question, because they not only compliment each other, they both have a lemon flavor seasoning spray in their recipe.”  Only 9 ingredients for both recipes. Serves 6 Total Time: under an hour

2 lbs white fish fillets (you can substitute scrod for other white fish like: haddock or flounder
1/2 cup breadcrumbs
2 tablespoons chopped fresh parsley
Lemon flavored seasoning spray
1/2 cup onions, chopped
2 tablespoons Orzo
1 cup brown rice
14 1/2oz chicken broth
1 teaspoon lemon zest

Directions Fish:

Preheat oven to 375F. Wash and pat dry fillets. Coat both sides of fillets with lemon flavored seasoning spray for 8 seconds. Place in a shallow baking dish that has also been sprayed with the lemon flavored seasoning spray. Sprinkle with salt and pepper. Top with breadcrumbs and 1 1/2 tablespoons chopped parsley. Coat the breadcrumbs and parsley with the lemon flavored seasoning spray, 3 seconds. Bake 20-25 minutes, until fish flakes.


Directions Lemon Rice Pilaf:

Spray a heavy bottomed saucepan with the lemon flavored seasoning spray. Sauté the onions over medium heat until softened, about 2 minutes. Add Orzo and rice, cook 2 minutes. Add water to broth to equal 3 cups. Heat to boil then reduce heat, cover and simmer for 40-45 minutes or until liquid is absorbed. Spray with lemon flavored seasoning spray, 3 seconds, then fluff with fork. Garnish with lemon zest and 1/2 tablespoon chopped parsley. Serve immediately. Yum Yum!
