Emeril’s Fresh Berries with Balsamic Drizzle And Almond Cream

Good thing this time of year you can still buy berries. Do you prefer berries over citrus fruits? Well if you do you’ll love Emeril’s Fresh Berries with Balsamic Drizzle and Almond Cream as an alternative to the usual desserts. Serves 6


1/2 cup balsamic vinegar
1 1/2 cup sour cream
1/2 cup + 2 tablespoons cream cheese, room temperature
1/4 cup powdered sugar
1/2 teaspoon almond extract
1 lb strawberries, hulled and sliced or quartered
1 cup fresh raspberries
1 cup fresh blackberries or blueberries
3 tablespoons almonds, lightly toasted and chopped


Bring the 1/2 cup of balsamic vinegar to a boil in a small saucepan, cook until it reduces to 1/4 cup and syrupy, about 3 minutes. Transfer to a small bowl, set aside to cool.

In another bowl combine the sour cream, cream cheese, powdered sugar and almond extract. Mix until the sugar has dissolved and the mixture is smooth. Divide the berries evenly into dessert bowls, then place a generous dollop of the sour cream mixture on top of the berries and drizzle on some balsamic vinegar. Garnish with some toasted almonds and serve immediately. Yum Yum!
