Medallions of Pork in a Apple Juice Sauce

I saw a package of pork medallions at Sam’s Club and then I remembered I had this recipe from years ago. Sweet and savory...if that’s what you like then you’ll like this for dinner. Serves 6 Total Time: about 2 hours 

Ingredients: 

24 Pork medallions 
8 tablespoons butter 
3/4 teaspoon salt 
1/2 teaspoon pepper 
1 1/2 teaspoons chopped parsley 
1 teaspoon chopped chives 
2/3 teaspoon crushed rosemary leaves 
2/3 teaspoon savory 
4 cups apple juice with 6 tablespoons cornstarch 
3/4 cup hot water 

Directions:

Preheat oven 375F. In a small bowl mix together all the seasonings with the butter. Put the butter mixture in a skillet and add the medallions. Brown the meat lightly using medium heat. Remove the meat and set aside. Add the apple juice and cornstarch. Cook for 5 minutes, stir with a metal spatula to prevent lumping. Add the hot water and mix well. In a casserole dish add the meat and pour in the sauce. Bake 375F for 1 1/2 hours, covered. Serve with sauce and your favorite sides. Yum Yum!
