Marinated Flank Steak with Green Peppercorns

Wow this looks yummy, only 6 ingredients and takes a half an hour to make (for rare) once it’s been marinated overnight. Serves 4

2 lbs flank steak
1 cup dry vermouth
1 clove garlic
1 tablespoon green peppercorns
2 tablespoons butter
Salt to taste

Score both sides of steak 1/8” deep and place in a baking dish.  Combine vermouth, garlic and green peppercorns and pour over meat. Marinate in the refrigerator overnight. Reserve marinade. Pat meat dry and smear butter on both sides. Add salt to taste.

Broil according to your preference (rare, medium rare, medium, medium well or well done). Remove from oven and keep warm. In a saucepan heat the marinade. To serve: slice thin across the grain. Place on a serving platter and spoon heated marinade over meat. Yum Yum!
