London Broil Marinated in Sherry

This London Broil marinated in sherry is especially good with broiled tomatoes. Serves 6 Total Time: 45 minutes, not including marinating time.

Ingredients:

1 3lb London Broil
1/2 cup medium dry sherry
2 tablespoons minced fresh ginger or 2 teaspoons ground ginger
2 cloves garlic, minced

Directions:

Score steak on both sides about 1/8” deep. Place with the rest of the ingredients in a plastic bag. Push out the air before sealing it. Marinate at least 4 hours at room temperature or overnight in the refrigerator. Turn the bag every now and then to make sure the marinade reaches all parts of the meat.

When ready to cook, remove the steak but save the marinade. Rub meat lightly with vegetable oil. Broil to taste (5 minutes on each side for rare). Baste with marinade one or twice on each side. To serve, slice very thin across the grain. The marinade can be stained, heated and served as a gravy. Yum Yum!

Broiled Tomatoes 

Ingredients:

3 medium tomatoes 
3/4 cup dry bread crumbs 
1 tablespoon minced parsley 
1 teaspoon rosemary 
1 tablespoon grated Parmesan cheese 
2 tablespoons butter, softened 

Directions:

Wash, dry and cut out stem ends. Cut tomatoes in half. Combine remaining ingredients in a bowl, then put equal amounts on each tomato. Broil alongside with London broil.
