Easy Lasagna


2 lbs ground beef
2 tablespoons olive oil
2 cloves garlic, minced
4 tablespoons dried parsley
2 tablespoons dried basil
2 15 1/2 oz cans homestyle spaghetti sauce
2 10oz pkg lasagna noodles
6 cups cottage cheese
2 10oz pkg frozen spinach, thaw and drain
1 cup Parmesan cheese
2 lbs mozzarella cheese, thinly sliced
Salt and pepper, to taste


Preheat oven 375F.

Brown meat in olive oil add the garlic, 2 tablespoons parsley, basil, a little salt, spaghetti sauce and simmer uncovered until thick, about an hour.

Cook noodles as directed on package and drain. Combine the cottage cheese with the eggs and a little salt and pepper, 2 tablespoons parsley and the 1/2 Parmesan cheese in a medium bowl.

In a baking dish place 1/2 the noodles on the bottom, spread 1/2 the cottage cheese, 1/2 the spinach, 1/3 the slices of mozzarella and 1/2 the meat sauce. Repeat, top with the remaining Parmesan cheese and mozzarella. Bake for 30 minutes. Yum Yum!
