Cod Fillets with Vegetable Sauce

This fish dish looks good and good for you. Serves 2 Total Time: 1 hour 


2 cod fillets 
3 tablespoons butter 
1/2 teaspoon curry powder 
1/4 teaspoon herb salt 
1/2 leek, washed, sliced lengthwise and chopped 
1 stalk celery, chopped 
2 tomatoes, chopped 
1/4 cup dry white wine
Salt and pepper, to taste 
Garnish: parsley, chopped and tomato wedges (optional)


In a skillet on medium heat add fish and cover with salted water. Simmer 8-10 minutes. Drain and keep warm. In another skillet melt the butter then add the curry, herb salt, leek, celery and tomatoes. Simmer until all vegetables are tender then add the wine. Season and cook a minute longer. Place fish on a platter and pour vegetables on top. Garnish with parsley and tomato wedges (if using). Yum Yum!
