Salt Block Chicken Breasts

Pollo su un Mattone is Italian for Chicken on a Block. The Himalayan Salt Block will season the chicken while it cooks.

If you remember from a previous post about grilling you need to marinate your chicken particularly if you are going to use the salt block on the grill.

I just purchased a citrus and onion marinade mix from Stubb’s, especially made for chicken.  It’s recommended that you marinate for an hour or longer for more flavor. One package is for 2 lbs of chicken.

Ingredients for marinade:

1 pkg Stubb’s Chicken Marinade Mix
1/4 cup olive oil
2 tablespoons water
2 tablespoons white wine vinegar

Directions:

Whisk the mix, oil, water and vinegar in a bowl; add the chicken . Place in the refrigerator for a minimum of 30 minutes to an hour. Remove chicken from marinade and discard.

As your chicken is marinating prepare your salt block for cooking. If you have a glass stove top stove you need to place your salt block on a wok ring. First start heating the block on low for 15 minutes, then 15 minutes on medium and finally 15 minutes on high heat. You can do the same on the grill. Just remember heating a salt block too fast it might crack.

Place your chicken on the salt block and cook the marinaded chicken on each side about 6 minutes each, or until the chicken is cooked through and no longer pink inside. Yum Yum!
