Meatless Southwestern Chili

Do you like chili without meat? Then you will like this meatless Southwestern chili. Serves 6-8 Total Time 4 hours 15 minutes


2 15 oz cans of kidney beans
1 15 oz can of pinto beans
1 15 oz can of black beans
1 15 oz can of corn
1 14.5 oz can diced tomatoes
1 red pepper, chopped
1/2 med yellow onion, chopped
2 1/2 cups of vegetable stock
1 cup salsa
1 heaping tablespoon minced garlic
1 teaspoon cumin
1 teaspoon cayenne pepper
Salt and pepper, to taste
Sprinkle with cheese (I used taco cheese)
Dollop of sour cream


I rinsed all of the beans then added them to the crockpot with all of the other ingredients down to the cayenne pepper. Stir and cook on high for 4 hours. Serve with cheese and sour cream, if desired. Salt and pepper, to taste. Yum Yum
