Crockpot Mexican Skirt Steak

These crockpot Mexican skirt steak is good on rice with black
beans or served as tacos with slices of avocado on top. Serves 4-6


Ingredients:

1 1/2 - 2 lbs skirt steak
1/2 red pepper, sliced thin
1/2 yellow pepper, sliced thin
1/4 yellow onion, sliced thin
1 lime, juiced
1 teaspoon cumin
1/2 teaspoon paprika
2 tablespoons minced garlic
1 teaspoon Mexican oregano
1/8 cup fresh cilantro or 2-3 tablespoons dried cilantro
Salt and pepper, to taste

Directions:

Cut the skirt steaks in half or more so it fits in a 6oz crockpot, set aside. In a bowl mix the cumin, paprika, garlic, Mexican oregano, salt and pepper.

Rub on both sides of steak and place in crockpot.
Sprinkle the cilantro on top. Add the onion and peppers. Cook on low 5-6 hours. Yum Yum.
