Bisquick Chicken and Broccoli Impossible Pie

Can you believe it, a pie that does the Impossible and make its own crust! This recipe is great for rotisserie or leftover chicken. You can make this two ways one with chicken and one without. The recipe below will include the chicken, but if you want to make Impossible Broccoli and Cheddar Pie just omit the chicken and add an additional 10oz bag of broccoli. Serves 6-8 Total Time: 50 minutes


1 10oz package frozen broccoli, thawed
3 cups shredded cheddar cheese 
1 1/2 cups cooked chicken, cut into 1” pieces 
2/3 cup onion, chopped 
1 1/3 cup milk 
3 eggs 
3/4 cup Bisquick 
Salt and pepper, to taste 


Preheat oven to 400F. Grease a 10x1 1/2-inch pie plate. In the pie plate mix the thawed broccoli, 2 cups of cheese, chicken pieces and onion. In a bowl beat the eggs, milk, Bisquick, salt and pepper until smooth (15 seconds in a blender or 1 minute with a hand mixer). Pour over chicken mixture in pie plate. Bake 25-30 minutes or until you can insert a knife in the center and it comes out clean. Top with remaining cheese and bake until it melts, 1-2 minutes. Cool 5 minutes before serving. Yum Yum
