Do you like to go to Top Golf for the food? I’m trying to figure out what they put in their Beer Cheese Queso. I’m pretty sure it’s the Kraft recipe, but they use a craft beer. The question is which; could it be Sam Adams, an IPA, an Ale of Blue Moon? If you know let me know. Makes 24 servings Total Time: 25 minutes
1 tablespoon butter
3/4 cup chopped onions
1 cup craft beer
1 lb cheddar cheese, cut into cubes
1 can Ro’tel diced tomatoes and green chilies
In a medium skillet on medium heat melt the butter and cook the onions until they are soft and translucent, 5-7 minutes. Reduce the heat to med/low and add in the beer, stir for 3 minutes. Pour into a casserole dish that’s been sprayed with a nonstick cooking spray. Add in the cubed cheese and the can of Ro’tel diced tomatoes and green chilies, mix well.
Cover and microwave on high for 5 minutes or until the cheese is completely melted and dip is well combined. Stir after 3 minutes and serve. Yum Yum!
