Quick and easy this Mexicali Casserole is sure to please. What kid wouldn’t love a Mexican dish with corn chips on top! Served along side a salad and a margarita for the adults and it’s a win-win . Serves 4-6 Total Time: 35 minutes.
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
16oz lean ground beef
16oz can whole tomatoes, undrained
Salt and pepper, to taste
1 teaspoon chili powder
1 16oz can red kidney beans, rinsed and drained
In a large skillet add the onion, green pepper and ground beef, cook over medium heat until the meat is browned, about 10 minutes. Add in the tomatoes, chili powder, then salt and pepper, to taste. Reduce heat to med/low and cook another 10 minutes stirring occasionally. Reduce heat to low then add beans cook 3 minutes. Sprinkle on some corn chips and serve immediately. Yum Yum!
