GREEK LEMON CHICKEN SKEWERS WITH TZATZIKI SAUCE

Greek Lemon Chicken Skewers is a different way to serve chicken that is not only delicious, but easy to make. The prep time takes the longest because the chicken is marinated in the refrigerator up to 3 hours. Once the chicken is marinated it only takes 6-8 minutes to grill. Serves 6

Ingredients:

1 1/2 lbs boneless skinless chicken breasts, cut into 1” cubes

Marinade:
3 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1 tablespoon olive oil (try lemon olive oil)
2 cloves garlic, minced
2 teaspoons dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon dried coriander
Salt and pepper, to taste

Tzatziki Sauce:
1 cup English cucumber (about 1/2 of the cucumber), peeled and diced
1 1/2 cups plain non-fat Greek yogurt
Fresh lemon juice from 1/2 of a lemon
1 tablespoon fresh dill, chopped
1/2-1 clove garlic, grated
Salt and pepper, to taste

Directions:

In a large bowl combine all the marinade ingredients, then add the chicken to coat. Cover and refrigerate from 45 minutes to 3 hours. Soak wooden skewers (if using) in water for 30 minutes. Heat the grill to med/high heat. Thread chicken onto metal or wooden skewers. Oil the grated of the grill pan and place skewers on them for 3-4 minutes each side, or until chicken is cooked through.

To make the tzatziki sauce combine all ingredients except cucumbers in a medium size bowl. Fold in the cucumbers and refrigerate until ready to serve. Yum Yum
