Classic Waldorf Salad

How many of you remember having a Waldorf Salad when they were growing up, especially on a holiday?

How much fruit do we need in our diet? I read that a woman under 30 should have at least 2 cups of fruit a day and 1 1/2 cups for women over 30. Men should have 2 cups no matter how old they are.

Waldorf Salad is a great side dish to serve, and simple enough to make every day. You can use 1/2 cup of low-fat vanilla yogurt and a teaspoon of honey instead of mayonnaise and whipping cream for a lower fat version of this recipe.

Recipe suggests you toast your walnuts, see video. Serves 4 Total Time: 20 minutes 

Ingredients:

1 green apple, core and diced
2 red apples, core and diced
1 tablespoon lemon juice
1 cup celery, diced
1 cup seedless grapes, halved
1/4 cup mayonnaise
1/4 cup whipping cream
1/2 cup toasted walnuts, chopped

Directions:

In a medium size bowl add the apples and lemon juice, mix well. Add the celery and the grapes, toss. Combine the mayonnaise and cream (or yogurt and honey) and pour over apple mixture, toss to coat. Refrigerate until ready to serve. Just before serving fold in the walnuts. Yum Yum!
