Chicken Montana aka Chip-Crusted Baked Chicken

Do you like chicken? Do you like chips? How would you like Baked Chicken covered in Chips? This recipe will serve 10-12 and takes 1 hour to prepare and bake (plus soaking time)

3 frying chicken
1 5oz bag potato chips

Cut your chickens up into pieces (breasts, legs and thighs) and place them in a bowl, cover with the milk. Let soak overnight.

When ready to cook, preheat oven 350F. Remove from milk and shake off excess liquid, but do not pat dry. Reserve milk. Crush the potato chips while they are in the bag the slit down the bag lengthwise to form a bowl. Roll each piece of chicken in the crushed potato chips and arrange in a single layer on a shallow baking pan with sides. Bake for 40-45 minutes until chicken is folk tender. Serve hot.

To make gravy measure the pan drippings. For each 2 tablespoons of drippings add 2 tablespoons flour and cook over medium heat, stirring constantly for 5 minutes. Add 1 cup reserved milk for each 2 tablespoons drippings and cook, stirring constantly until gravy thickens. Yum Yum!
