Skillet Salad

This is an easy salad if your serving a lot of people. Serves 12 Total Time: just 20 minutes. 


10 medium Vidalla onions, peeled and sliced 
4 lbs green pepper, seeded and cut into strips 
6-8 tablespoons olive oil 
12 ripe tomatoes, sliced 
2 jars (7oz each) whole red pimientos, drain and cut into strips 
Salt and pepper, to taste 


Sauté the onions and peppers in the oil over moderate heat for about 8 minutes, or until slightly colored. Add the tomatoes and pimientos to the onions and peppers. Salt and pepper, to taste.

Cook 4-5 minutes longer, or until the tomatoes are soft but not mushy. Transfer to a serving bowl.  Make a meal of if by adding grilled chicken and a side of garlic bread. Yum Yum!
