Creole Chicken

My granddaughter, Caitlyn loves okra so I thought I’d make her this Creole Chicken. Do you have an okra lover in your house? Serves 4 Total Time: 1 hour

Ingredients:

2 1/2 - 3 lbs of chicken breasts, cut into 1” pieces
1/2 cup olive oil
2 tablespoons flour
1 medium onion, chopped
3 cloves garlic, minced
3 large ripe tomatoes, peeled and seeded
3/4 lb fresh orka, sliced
1 red or green pepper, sliced in strips
1 cup chicken broth
1/2 teaspoon dried basil
Salt, to taste
Cayenne, to taste
3 tablespoons parsley, minced for garnish

Directions:

Brown chicken in oil on both sides for 6 minutes each, or until no longer pink inside. Set aside. Drain all but 2 tablespoons of oil from skillet and add the flour. Cook until browned, but not burnt. Add remaining ingredients including chicken,  breaking apart the tomatoes. Cover and cook on simmer until chicken is tender, about 20 minutes. Baste chicken with sauce occasionally. Serve over cooked rice of your choosing. Yum Yum!
