Instant Pot Pork Roast with Sauerkraut

How many of us have Pork and Sauerkraut for New Years Day? Here is a recipe for your Instant Pot that you got for Christmas 😉. Here’s wishing everyone a happy and prosperous new year! Serves 4 Total Time: 1 hour 25 minutes

Ingredients:

1 tablespoon olive oil
6 lbs pork shoulder
Salt and pepper, to taste
1 apple
24 oz sauerkraut
1/2 cup water

Directions:

First you need to sauté your pork in the Instant Pot. Add oil and use the sauté setting on high. Salt and pepper both sides of the roast and sear both sides until brown, 3-5 minutes each. While the meat is searing grate the apple or pulse in a food processor (remove seeds, but leave on skin). When meat is done cancel sauté setting and add in the water, sauerkraut with juice and top with the apple. Cover, make sure valve is closed and cook on high pressure for 70 minutes. Use the natural release method, which should last about 15 minutes longer before you can open lid. To serve: remove roast to slice it then place on a platter with the sauerkraut. Yum Yum!
