Ocean Scallops Jerez

Jerez, Spain 🇪🇸 located inland, 20 km from Sanlucar, Jerez holds worldwide acclaim for its sherry and brandy production.  The sherry production houses are located in the center of the town of Jerez.

Sherry and scallops are well paired together. If you love scallops you’ve got to try this recipe. Serves 4

Ingredients:

1 1/2 lbs ocean scallops
2 tablespoons butter
2 tablespoons fresh lemon juice
2 teaspoons soy sauce
1/4 cup Jerez sherry
1 tablespoon fresh dill, minced
Garnish: lemon wedges and dill sprigs

Directions:

Wash scallops and pat them dry with a paper towel. Make sure there is no sand residue or bits of shell. Melt the butter in a large nonstick skillet and add the scallops when it’s hot. Cook until lightly browned, 3-5 minutes. Turn over and add the lemon juice, soy sauce, Jerez sherry and minced dill. Cover and cook on low heat for 10 minutes. Remove scallops to a serving dish, then turn the heat up to high, stir until sauce thickens. Pour sauce over scallops, garnish with the lemon wedges and dill sprigs. Serve with your favorite sides.
