Chipotle Copycat Burrito Bowl 🍲



How would you like your Chipotle’s Burrito Bowl less fattening? Let’s take a Copycat version of Chipotle’s Burrito Bowl and put it on a diet! Serves 4

Ingredients:

1 cup brown jasmine rice
1 tablespoon olive oil
1 lb ground turkey
1 teaspoon taco seasoning
Salt and pepper, to taste
1/4 cup plain yogurt
2 teaspoons hot sauce
(I’m not a hot sauce girl, so instead of making a dressing with the yogurt and hot sauce, I’m just using a 1/4 cup of low fat sour cream)
2 cups grape tomatoes, rinsed and cut in half
2 avocados, cored and diced
1 can of black beans, drained and rinsed
Garnish; cilantro leaves
Optional: 1/4 cup low fat cheddar cheese, not pictured

Directions:

In a small saucepan cook rice according to package instructions. In a skillet heat olive oil on med/high heat add ground turkey and cook it until it’s no longer pink, 5-7 minutes. Season with taco seasoning, salt and pepper.

You can either combine the yogurt and hot sauce in a small bowl for dressing or use a low fat sour cream.

Assemble your bowls with rice, then turkey, tomatoes, avocados and black beans. Drizzle on your dressing or sour cream, top wth cheese, if using. Garnish with a few cilantro leaves and serve. Yum Yum!
