Cauliflower and Goat Cheese Mash

Do you watch Guy’s Grocery Games? Last night I watched an episode where the contestants had to prepare a three course meal in a short period of time. One contestant wanted to make mashed potatoes, but he knew he couldn’t get them done in time, so he made cauliflower and goat cheese mash instead. Ingenious, at least that’s what the judges thought. So, let’s give this recipe a try. I’ll have my granddaughters let you know if they like them or not. Let’s hope they give a better review on this than what they gave on my first attempt at cake....sad so sad 😞. Serves 4


Ingredients:

1 head of cauliflower, cut into florets
1 tablespoon of butter
1 tablespoon cream
3 oz goat cheese, softened
1 head roasted garlic, directions below
1 teaspoon salt
1/2 teaspoon pepper

Directions:

Bring a pot of water to a boil. Add the cauliflower and cook for 5 minutes. Drain and transfer to paper towels to blot excess moisture.  In a large bowl combine the cauliflower, butter, cream, goat cheese, garlic and salt and pepper. Blend with a hand mixer until smooth. You could also use a food processor.

In the food processor add the ingredients a little at a time, pulsing until well distributed and scraping down the sides periodically. If it’s too thick add a little more cream. Remove to a serving dish. To keep warm, cover with foil and put in a 200F oven until you are ready to serve. Yum Yum!
