3 stalks of celery, cut into 3 inch pieces
3 large carrots, cut into 3 inch pieces
1 medium yellow onion, cut into 1 inch pieces
4 medium red potatoes, quartered
Dash of thyme
2.68 lb corned beef with seasoning packet
1/2 head of cabbage
Cut all the vegetables and place them on the bottom of the crockpot. Put the corned beef fat side up on top of the vegetables. Fill with water almost covering the corned beef, 4-5 cups. Add the seasoning packet that came with the corned beef. Sprinkle with a dash of thyme. Cook 4 hours on high or 8 hours on low. Then add the 1/2 head of cabbage and cook for another 45 minutes on high or 1 1/2 hour on low.
