Baked Garlic Butter Chicken

Boy does this look good. I am going to make it tonight for dinner.  The recipe says its quick and easy. Only a 5 minute prep time and 35 minutes to bake.  Serves 4

I am going to divide the ingredients in half because I am only using 2 chicken breasts instead of 4, so double everything for a serving of 4.

2 boneless chicken breasts
salt and pepper, to taste
1/2 stick of butter or 1/4th cup
3 cloves of garlic, minced
1/2 tablespoon rosemary
1/4 cup mozzarella cheese

Instructions:

Preheat oven to 375F

Lightly grease baking dish with butter

Season chicken breasts with salt and pepper on both sides.  Arrange in a single layer in the baking dish and set aside

Add butter to a skillet and melt stir in the garlic and cook over medium heat for 4-5 minutes until lightly brown ...do not burn the garlic. Stir in the rosemary and remove from heat.

Pour the garlic butter over the chicken breasts. Bake for 30-32 minutes or until chicken's internal temperature is 165F.  Sprinkle the mozzarella cheese and cook another 3 minutes until cheese is melted.  Let stand once removed from oven a few minutes.  Serve with left over popovers,  Yum Yum!
