What's for Dinner: Sausage Potato Casserole

Only 6 ingredients and 1 hour of your time to make this delicious sausage potato casserole.

Ingredients:

6 large potatoes, cut into 1" cubes
1 lb cheddar cheese
3/4 cup milk
2 tablespoons flour
2 cups broccoli florets, cut into bite size pieces
1 pkg sausage, sliced

Directions:

Preheat oven to 400F. Place cubed potatoes in a pot of boiling water for 5 minutes, so they are beginning to soften but still firm. Drain and set aside.

In a medium size saucepan combine the milk flour and cheese. Cook over medium heat and stir until the cheese has melted.

Combine the potatoes, cheese, sausage and broccoli in a casserole dish. Bake 30 minutes covered with foil then uncover for 10-15 minutes. Serve. Yum Yum!

What's for Dinner: Crockpot Stroganoff Cube Steak

I've never tried crockpot stroganoff cube steak, so this will be something different for my family. Check back later to find out their review in comments. I'm also combining different ingredients from 2 recipes and adding a twist of my own. So, cross your fingers. Serves 4-6

Ingredients: 

4 cube steaks
1 cup flour
1/4 teaspoon garlic powder 
1/2 teaspoon salt 
1/4 teaspoon pepper 
2 tablespoons olive oil 
1 yellow onion, chopped
6 oz. mushrooms, sliced
1 cup beef broth 
1/2 -1 cup sour cream 
1 teaspoon tarragon 
1 teaspoon Dijon mustard 

Directions:

Heat skillet add 1 tablespoon oil. Cover the steaks on both sides with salt, pepper and garlic powder then dredge through the 1 cup of flour. Add to skillet and brown on both sides. Set aside, Once cooled cut into 1 inch cubes and put into the crockpot. Add the other tablespoon oil to skillet add the onions and mushrooms cook for 5 minutes then add to crockpot. 

In a bowl combine the remaining ingredients, stir then pour over steaks and cook on low for 6 hours. Yum Yum!

Ham Broccoli and Cheese Tortellini

Found a ham and cheese tortellini recipe that I'm mixing up a bit. Instead of peas😝 I'm going to substitute broccoli, add 1/2 yellow onion and use the tri-colored tortellini. In the comments section check out my family's reviews.

Ingredients:

1 1 1/2 lb ham steak, cut in 1 inch cubes.
2 9 oz packages of tri-colored tortellini
1 stalk of broccoli, chopped
1 tablespoon butter
1/2 yellow onion, chopped
1 cup chicken broth
1/4 cup heavy cream
1 cup white cheddar, shredded
1/2 cup Parmesan cheese, shredded
Salt and pepper to taste

Directions:

In a medium size skillet melt the butter then add the chopped onions. Cook until softened and golden brown then add the cubed ham and cook an additional 5 minutes. Add the broccoli, chicken broth and tortellini (salt and pepper to taste) bring to boil then reduce heat and let simmer for 12 minutes (required time stated on tortellini package) When the tortellini is tender pour into a 9" oven proof baking dish unless your skillet is oven proof add in the cream and the white cheddar stir. Sprinkle with the Parmesan cheese and broil for 2-3 minutes or until the cheese is golden and bubbly. Yum Yum.

Creamy Parmesan Garlic Mushroom Chicken

Boy is this creamy Parmesan garlic mushroom chicken yummy. 

Ingredients: 

4 skinless, boneless chicken breasts, cleaned and hammered 
1 cup of spinach, chopped
2 tablespoons olive oil
Salt and pepper to taste 
8 oz mushrooms, diced

Parmesan garlic sauce:

1/4 cup butter
2 tablespoons garlic 
1 tablespoon flour
1/2 cup chicken broth 
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder 
1/4 teaspoon pepper 
1/2 teaspoon salt

Directions:

In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in the center. Add in the mushrooms and cook until tender, about 2 minutes. Remove and set aside.

To make the sauce add the butter and melt then add the garlic cook until tender. Whisk in the flour until thickens. Whisk in the chicken broth, heavy cream, Parmesan cheese, garlic powder, salt and pepper. Add the spinach until it wilts then add the chicken and mushrooms back in the sauce. Serve over pasta, if desired. Yum Yum!

German Cucumber Salad

If you love a cucumber salad with Italian dressing, you'll love this German cucumber salad made with sour cream. Easy peasy serves 4-6

Ingredients:

1 cucumber, peeled and sliced
1 medium size tomato, cut into chunks
1/4 onion, diced
1/2 cup sour cream
2-4 teaspoons lemon juice
3/4 teaspoon dill
Pinch of salt

Directions:

In a medium bowl add the cucumber, tomatoes and onion. In a separate bowl add the remaining ingredients then pour in the bowl with the cucumbers, mix well. Chill before serving. Yum Yum!

One Pan Meal Sausage and Potatoes

I love one pan meals and this one pan meal sausage and potatoes is super easy. The original recipe called for a cook time of 45 minutes but I cut my sausage into 1/4" slices instead of 1" to reduce the cooking time to 30 minutes or just until the potatoes are tender. If I would have continued to cook it for 45 minutes the sausage would have been over cooked and hard. I suggest you check it and stir it every 10-15 minutes.

Ingredients:

1 pkg of sausage, cut into 1/4" slices
5-6 medium sized red or Klondike potatoes, cubed into 1" pieces
1/2-1 medium size yellow onion, chopped
2 tablespoons olive oil
1 tablespoon dried thyme
1 tablespoon sweet paprika
Salt and pepper, to taste
A handful of shredded cheese of your choice (I used Colby and mozzarella, you could also use a sharp cheddar)

Directions:

Preheat oven to 400 degrees. In a large bowl add the sliced sausage, cubed potatoes and chopped onions drizzle with olive oil top with the seasonings and mix well. Pour mixture onto a foil lined baking sheet that has been sprayed with nonstick cooking spray. Place in oven for 30 minutes, check on it every 10-15 minutes and stir. When potatoes are tender turn off oven sprinkle with cheese and place back into the oven until the cheese melts, about 5 minutes. Serve. Yum Yum!

Streusel Sweet Potato Casserole

My 💯Th recipe! Who doesn't like sweet potato casserole!?!  This recipe calls for a streusel topping made with brown sugar, oats and walnuts. Yum Yum .... serves 6-8

Ingredients:

3 lbs sweet potatoes, peeled and cut into 1" cubes
1/2 stick butter (4 tablespoons)
3/4 cup brown sugar
1/2 cup heavy cream
1 teaspoon salt
1 tablespoon vanilla extract
1 teaspoon nutmeg
1/2 teaspoon cinnamon
2 cups mini marshmallows, or large ones cut in 4ths

Streusel Topping:

1 cup chopped walnuts
1/2 cup flour
1/2 stick of butter or 4 tablespoons
6 tablespoons brown sugar
1/4 cup rolled oats
1/4 teaspoon cinnamon

Directions:

Preheat oven to 375 degrees. Place the sweet potatoes in a large saucepan cover with one inch water and salt.  Bring to boil then reduce to simmer for 15 minutes or until tender (easily pierced with a fork). Drain. In the saucepan add the brown sugar, heavy cream, vanilla extract, nutmeg and cinnamon stir until blended then add 
the sweet potatoes and mash until smooth. Transfer to a 9" bakingdish. Top with the marshmallows.



Streusel topping: In a microwave safe bowl melt the butter. Then add the remaining ingredients, stir then pour on top of potatoes. Bake for 15-20 minutes or until streusel is crisp and marshmallows are lightly brown. Serve..Yum Yum!

Loaded Cauliflower Casserole

You've got to try this recipe. This loaded cauliflower casserole can have many different ingredients according to taste. Mine included mushrooms and bacon bits while alternative ingredients might be chives, ranch dressing mix or plain Greek yogurt (instead of sour cream).

Ingredients:

1 head of cauliflower, broken into florets and cleaned
1/2 cup sour cream
1/4 cup bacon bits
3 mushrooms, chopped
1/2 cup shredded cheddar cheese
1/2 teaspoon onion salt
1/2 teaspoon garlic powder
1 tablespoon butter, cut into pieces

Directions:

Steam the cauliflower for 15 minutes then drain and pat dry. In a 9" baking dish add the rest of the ingredients except the butter. Add in the cauliflower and mix well. Top with the butter pieces and more cheese. Bake in a 350 degree preheated oven for 30 minutes. Yum Yum!

Creamy Grape Salad

Wow! This creamy grape salad was this weeks family fav! I changed it up a bit form the typical recipe by adding celery and apples sine I only had red grapes.

Ingredients:

8 oz sour cream
8 oz cream cheese
2 teaspoons vanilla extract
1/3 cup sugar
1 2.5lb bag of red grapes
1 2.5 bag of green grapes
Or 1 apple and 2 stalkes of celery, diced
5 tablespoons brown sugar
4 tablespoons pecans

My Directions:

In a medium bowl add the grapes and the diced apples and celery. In another bowl add the sour cream, cream cheese, vanilla extract and sugar. Blend with a hand mixer then add it to the grapes, mix well. Top with the brown sugar and pecans. Chill before serving.

***You could substitute the sour cream with lite whipped cream, eliminate the sugar and get fat free cream cheese; if you are watching your figure.😉
