Scallops in a Bacon Cream Sauce

OMG do you like scallops? I would definitely serve this Scallops in Bacon Cream Sauce dish for a special occasion or a dinner for you and your special someone. Serves 2. Total Time to prepare and cook 30 minutes.

Ingredients:

6 slices of bacon, sliced
1/2 tablespoon butter
1 cup heavy cream
1/2 cup Parmesan, grated
1/2 teaspoon olive oil
6 large scallops
Salt and pepper, to taste
Garnish: chives, chopped

Directions:

In a medium size skillet add the sliced bacon and cook over medium/high heat until crisp.  Remove with a slotted spoon and set aside. Add the butter, cream and Parmesan into the same skillet with the bacon grease. Reduce the sauce over medium heat by have then add the bacon back in, season with salt and pepper to taste. Turn heat down to low to keep sauce warm.

In another skillet on medium/high heat add the olive oil. When the oil is HOT sear the scallops on both sides until golden brown, about 1 minute each. Remove to a paper towel lined plate to drain.

Serve in a pasta/salad bowls. Sauce first, then the scallops and finally garnish with chopped chives.
